My dough method is just simple by the way. I use 150 grams of flower, 90 grams water, 2.5 grams of IDY and 3 grams of salt. I let it rise for about 3 to 5 hours and than i make a new ball out of it, i fold it 2 times and reball it. After 30 minitus or so i make the pizza out of it. I'm currently having a pizza oven built out of a propane tank. The tank will stand on its side making it about 48" tall. The top 12" will be separated from the fire with a 1/4 inch steel plate.
